Currently ACF Fields thats are f.e. added on WooCommerce native Product Categories Taxonomy are not publicly readable or adjustable overt the WooCommerce REST API. ACF should support the WooCommerce REST API by default as currently ACF doesn't add ACF field values to the WooCommerce endpoints in the wp-json/wc namespace.
